Blueberry Lavender Chia Seed Pudding


Ingredients for chia layer:

  • 2 cups coconut milk
  • ½ cup Chia Seeds
  • ½ teaspoon vanilla extract
  • ¼ cup (or less) maple syrup (or sub any sweetener)

Ingredients for blueberry lavender layer:

  • ½ cup coconut milk
  • 1 cup frozen blueberries
  • 1 teaspoon fresh or dried lavender
  • Topping: dried lavender

Mix all ingredients together for the chia layer and place in a mason jar for at least 4 hours or overnight. After 4 hours of letting it sit, it’s time to make the bluberry layer. In a food processor or blender, blend the blueberry layer ingredients together. Place into a jar and layer the chia pudding on top. Sprinkle some dried lavender and enjoy!
